Camping Recipe: Beef Skewers

Ingredients

  • 1 lbs beef top sirloin steak
  • 8 ounces portobello mushrooms
  • 1 red pepper
  • 1 yellow pepper
  • 1 green pepper
  • 1 medium red onion
  • 1 medium sweet onion
  • Around 2 tbsps of olive oil
  • Fresh oregano
  • 2 large garlic cloves
  • ½ tsp fresh ground black pepper

Instructions:

  1. Wash and dry all your produce.
  2. Start by tenderizing the top sirloin steak. If you got in-bone steak, you’re going to want to cut the meat from the bone and then turn it into 1-inch pieces.
  3. Chop the peppers and onions into 1-inch or bite-size pieces and separate them into their own bowls.
  4. Roughly chop the fresh oregano until you have around 2 tsp. And then finally minced the garlic.
  5. In a large bowl, combine the olive oil, oregano, cloves, and fresh ground black pepper.
  6. Divide the seasoning mix among the beef, mushrooms, peppers, and onions.
  7. If you’re using bamboo skewers, make sure you have soaked them for at least 20 minutes before beginning to put together your skewers.
  8. Carefully thread the beef, mushrooms, and veggies onto the skewers. Tip: your ingredients will cook more evenly. If they are on skewers with just that type of ingredient on them. For example, your skewers should be all beef, all pepper, all mushroom, and all onion instead of combining them on a single skewer.
  9. Be sure to leave a little space between each piece of meat to ensure they cook all the way through.
  10. Be sure to build a strong fire and allow the grill grate to heat up before placing the skewers on it. Additionally, make sure you wash the grill grate with a towel, soaked in oil, and a pair of tongs before the fire gets too high.
  11. Put the skewers on the grill over medium heat, and cook for approximately 8 to 10 minutes.
  12. When you remove the kebabs from the heat, season with salt and pepper to taste and serve.
