Summer Camping Recipe: Potato and Hot Dog Packets

Ingredients:

Serves: 4

  • 4 small potatoes
  • Olive oil
  • Salt and pepper to taste
  • 4 hot dogs
  • 1 small onion
  • 1/4 c. shredded cheddar cheese
  • 1/2 c. barbecue sauce

Instructions:

  1. Wash and dry all produce.
  2. Cut potatoes and onions into wedges.
  3. In a small bowl, add the potato wedges and drizzle with olive oil. Season with salt and pepper and toss to coat.
  4. Cut four large squares of heavy-duty aluminum foil.
  5. Divide the potatoes and top with a hot dogs, onion wedges, and cheese.
  6. Drizzle the packet filling with BBQ sauce.
  7. Fold up the edges of the packet and seal tightly.
  8. On a grill heated to medium heat or over your campfire place the packets on the grate and cook for 10-15 minutes.
  9. Remove from the heat and check the potatoes with a fork. If the potatoes are still hard, return to the heat for another 5 minutes.
  10. Once the potatoes pierce easily with a fork, remove from the heat and serve.
